The ingredients needed to make KAKHARU PODA PITHA (pumpkin cake):
  1. Take 1/2 kg ripe Pumpkin
  2. Prepare 1/2 Cup sugar
  3. Get 1/2 Cup jaggery
  4. Make ready 1/2 Cup grated coconut
  5. Get 1 Cup Tuta Basmati Rice (soaked in water for 1 hr)
  6. Take 1 Teaspoon baking powder
  7. Take 1/2 teaspoon baking soda
  8. Make ready 2-3 pieces chopped litchi
  9. Get 6-7 pieces Almonds
  10. Take 1/2 Bowl Sooji (semolina)
  11. Prepare 1/2 Cup Water
  12. Make ready 2 Tablespoons Deshi Ghee
  13. Take 2 Teaspoons milk made
  14. Prepare 1 Medium Size Banana leaf
  15. Take as required for garnishing few pieces of coconut slices,
  16. Get as required Almonds and litchi

It is an authentic Odia dish Specially made during Raja Festival ( we celebrate Women hood) or welcome Monsoon. One of the authentic dish of Odisha.. . Toโ€ฆยป This cake is called PODA PITHA. lord Jagannath loves to eat PODA PITHA. When the top portion will look little dark brown switch off the ovan.

Steps to make KAKHARU PODA PITHA (pumpkin cake):
  1. First step is to wash pumpkin and then remove it's skin then cut it into medium pieces and then take a pressure cooker and cook it by adding little water to it and wait for 4 to 5 whistle. Turn off the gas.
  2. Wait for 5 to 6 mins the gas will release by it's own from the pressure cooker. Now transfer that batter to a mixing bowl and cool it completely and add there Semolina and raw soaked rice(drain all water ๐Ÿ’ฆ) and grind it together all to get a fine and sooth paste.
  3. Note: Don't add extra water ๐Ÿ’ฆ to it.
  4. Now add grated coconut, ghee, sugar, chopped litchi, milk made and mix it well. Cover the batter and rest it for 1 and 1/2 hr.
  5. After 1and 1/2 hr bring that paste and add there baking powder and baking soda and stir it in one direction.
  6. Now again switch on the gas flame a place a pressure cooker set there a banana leaf and apply some ghee on the leaf both top and bottom and pour the batter to it and cover the lid but remove it's load and cook it or bake it for 1 hr in a slow flame. After an hr check it with the help of a tooth pick. Cool it for 15 mins.
  7. To remove the cake or Pitha ๐Ÿฅฎ easily place a big sige mouth open vessel and pour 3 glasses of water and place that pressure cooker there for 4 to 5 mins and with the help of your โœ‹ hand remove take out the cake. It's ready now ๐Ÿ˜˜๐Ÿ˜„โค๏ธโค๏ธ serve and enjoy….
  8. Note: You can adjust the sweetness according to your taste
