You can use either Basmati Rice or with Gobindobhog Rice to make Ghee Bhat. In a pan, heat ghee and add tejpatta, cinnamon, cardamom and cloves. The moment the nice aroma of garam masala starts coming out, add cashew and raisins and fry them on low heat till they are light golden brown. Mishti Ghee Bhaat, a traditional Bengali rice dish is part of the menu on special occasions.

Instructions to make Mishti ghee bhaat:
  1. Boil water cook till it is firm to the bite.keep aside to cool completely.
  2. Heat desi ghee in a kadhai.add Onion and fry till golden and crisp.remove from kadhai and keep aside.
  3. Now add cashewnuts and fry them.keep them aside.
  4. Now add bay leaf,clove,cardamom to it.cook till it sputter.
  5. Add rice to it and toss gently to coat them with ghee well.
  6. Add sugar and salt.Mix well till sugar melts and little caramalized.
  7. Mix fried onion,raisins and cashewnuts.
  8. Add saffron to the warm milk.
  9. Add this milk to the rice and cooks a little on low flame approx 2-3 minutes.
  10. Ready to serve.Garnish with some more dry fruits.

Translated as 'Sweet Ghee Rice', it is also called Mishti Bengali Pulao in some households. The mishti bhaat or mishti polau or ghee bhaat ,for Bengalis, is always associated with happy times and celebrations.
