Steps to make Nolen Gurer Mishti Doi:
  1. Boil and reduce the milk to half. This might take 40-45 minutes.
  2. Stir it constantly to avoid deposition of cream layer.
  3. Once the milk is reduced, turn off the flame and add nolen gur. Stir properly to dissolve the jaggery in milk.
  4. Once the jaggery is properly dissolved, let the milk cool down for 5 minutes.
  5. Now, add sour curd and mix well.
  6. Pour the mixture into several small clay pots and keep them in a warm place to set.
  7. Please make sure that you don’t touch or move the pots once you keep it to set. Keep them in the same place for atleast 12 hours.
  8. Once they are set, keep in refrigerator for 1-2 hours and serve chilled.

The nolen gurer mishti doi is my favorite one. In Orissa, however, we just make one variety of mishti doi and we call it rabri mitha dahi. It's rich, creamy, thick and has a brown color from the caramel and delicious to resist. My vegan mishti doi or sweetened vegan yogurt has everything that you typically find in mishti doi, but in its vegan. This Bengali Bhapa Doi is known as Sweet Yogurt with Date Palm Jaggery to rest of the world.
