  3. Get 125 gm yoghurt (curd)

Instructions to make Mishti  Doi:
  1. This Bengali sweet delight is a perfect sweet dish, which can be prepared at home very easily.In a saucepan, heat the milk over medium-high flame. When it starts to boil, add 300 grams sugar and reduce the heat to medium-low and continue boiling and stirring until it reduces to half. Keep it aside.
  2. In a non-stick pan, over medium flame, heat remaining 100 grams sugar. Quickly reduce the temperature to medium-low and cook it for 3 to 4 minutes stirring continuously, until it melts and starts to caramelize. Be extremely careful about the sugar.
  3. Add the caramelized sugar to the milk and give a gentle stir to mix it well. When the milk is warm, add plain yogurt. Mix it thoroughly and divide the mixture into separate container.
  4. Keep it in a closed microwave covered with a kitchen towel for about 4 to 6 hours or until it settles. Transfer it to a refrigerator and chill it for about 3 to 4 hours. Add chopped pistachio.Mishti Doi is ready to serve.Serve chilled Mishti Doi to entertain the guests for lunch or dinner.
