  5. when cold fill with whipped cream and well drained pineapple or mixed berries roll like a swiss roll , you may need to use a knife to assist the rolling as it can stick a little (I find that makes it easier ) roll onto serving plate and dust with icing sugar if desired
  6. if using mixed berries simmer the reserved liquid with sugar to make a sauce to serve with it

Serve with extra whipped cream and more fruit salad. To make pavlova roll, beat egg whites in large bowl of an electric mixer until soft peaks almost form. It's a recipe I saw on Leite's Culinaria for a lemon pavlova roll; it says: "after cooking the pavlova, allow it to cool completely, dust with sugar.spread the lemon curd filling onto the pavlova and roll up to make a tight jelly roll."
