This stuff tastes just like Tapioca pudding! I wanted to make rice pudding, but didn't want to make a huge batch. Also, I wanted to start with already cooked rice and have no eggs or evaporated milk on hand.

This version, infused with orange zest, is just delicious. Even better, it's quick and easy! Using Minute Ready to Serve Rice means dessert can be a last-minute thought, and still be ready in time. In a small heavy saucepan, combine rice, milk, sugar and salt; bring to a boil over medium heat.

Steps to make Quick and Creamy Rice Pudding:
  1. Combine all ingredients in a saucepan and heat on medium heat until mixture comes to a boil, stirring constantly and adjusting the heat as needed so it doesn't scorch or stick. Stir for 1-2 minutes as it bubbles until very thick. Turn heat off and cover. Eat it hot or cold. Refrigerate

Reduce heat to maintain a low simmer. I'm a rice pudding afficionado, and this is a fantastic recipe. Some recipes you see call for the rice to be cooked in water first, which is a bit easier and faster, but doesn't make for very creamy pudding. I've made this particular recipe several times and found that an hour of cooking time simply isn't enough. I wasn't going for the best tasting rice pudding ever more for a quick easy close to tasting perfect type.:) I made a few changes to the recipe.
