Mine was very yellow on the inside though. Coconut fans, this dessert is for you. With coconut in the cake batter and frosting, plus a generous coating of shredded coconut to finish it off, this cake is bursting with rich coconut flavor—perfect for any special occasion. Instructions to make Coconut cake:
  1. Mix butter,eggs,and sugar and coconut flavor with a mixer gradually add the dry ingredients and mix well,prepare the baking pan and bake.
  2. Add 2 tbsp of sugar to 1/4 cup of water mix well until the sugar dissolved in the water and brush all over the cake,to soften and moisturize the cake.
  3. Butter cream-Beat 250g butter with a mixer for about 5mins,gradually add 500g icing sugar and mix well,add 3 tbsp powder milk and coconut flavor (1 tsp) and devide in to 2, add food colour of your choice to the half.
  4. Use the plain butter cream and spread all over the cake,and decorate with the colored. Sprinkle some coconut on the cake and serve.

The only basic changes I made were to use a fork instead of a straw to poke the holes pour the cream/cond milk mixture while the cake is still hot and I made fresh whipped cream. The cake itself is soft, fluffy, and moist and the frosting is creamy coconut buttercream! A lot of coconut cakes have cream cheese frosting, but I prefer mine with coconut buttercream. The recipe is cake gold and I knew it would be the perfect starting point for a fluffy and moist coconut cake. Coconut cake is a southern tradition (just like this Hummingbird Cake!) and I love my grandma's version.
