Steps to make Coconut cake:
  1. Preheat the oven to 180 degree celcius nd grease ur pan with butter
  2. Cream the butter and sugar together for 5-6 min or until pale nd light. Scrape down the sides of the bowl with a rubber spatula from time to time
  3. Gradually add the eggs, mixing well between each addition. Add 2 tsp of the vanilla extract nd mix again. Sift the flour, baking powder,nd salt into the bowl, add the grated coconut nd beat again until the mixture is smooth nd the ingredients are well combined.
  4. Pour the mixture evenly between the prepared tins nd bake for 25-30 minutes, or until the cakes are well risen nd a skewer inserted into the middle nd comes out clean.
  5. Leave the cakes to cool in the tins for 5mins, then carefully turn out onto a wire rack and leave to cool completely
  6. In a pan, add sugar nd water stir it until d sugar melt then add small amount of butter and stir again. Add grated coconut, powdered milk,nd vanilla Flavor. Stir well nd let it done for 3-4mins. After that keep it in d fridge to cool before spreading it on the cake. 🥰🥰🥰😋😋

The only basic changes I made were to use a fork instead of a straw to poke the holes pour the cream/cond milk mixture while the cake is still hot and I made fresh whipped cream. I made this cake for a good friend's birthday dinner. FYI, I'm a northerner and made coconut cake as a kid but probably only either a box mix or a white cake and we put coconut on top of the frosting. However, I'm making this for a true southern gal….stress. The recipe is cake gold and I knew it would be the perfect starting point for a fluffy and moist coconut cake.
