Hey everyone, I hope you are having an amazing day today. Today, I will show you a way to prepare a special dish, stick kulfi. It is one of my favorites food recipes. For mine, I’m gonna make it a little bit unique. This is gonna smell and look delicious.

Other versions of kulfi use ground almonds or even mango puree. The dessert can be frozen in silicone popsicle molds or paper cups with wooden popsicle sticks. Either way, be careful unmolding the kulfi before serving since they have a delicate texture.

The ingredients needed to make Stick Kulfi:
  1. Take 1 litre full fat milk 🥛
  2. Make ready 1 tbsp custard powder
  3. Take 1 tbsp wheat flour
  4. Prepare 1/2 tbsp clarified butter(ghee)
  5. Get 1/2 cup condensed milk
  6. Make ready as needed Chopped nuts
  7. Prepare saffron a pinch (optional)
  8. Make ready 1/2 tsp cardamom powder

You can dip the molds in a bowl of warm water or run them under the sink. This should loosen the kulfi enough for you to remove it from the mold..

Instructions to make Stick Kulfi:
  1. In a pan heat the clarified butter 🧈 (ghee) and add the wheat flour to it. Roast it till the raw smell goes off. Keep it aside.
  2. In another pan heat up milk and roasted flour & mix well. Make sure there are no lumps. Then add custard powder to it. Cook it for 10-15 minutes till the milk reduces and thicken to desired consistency.
  3. Now add condensed milk to it & mix well. (You can also use sugar instead of condensed milk). Add cardamom powder and saffron to it.& switch off the flame.
  4. Let this mixture cool down and the pour this mixture to an icecream mould.& set it in the freezer initially for 2-3 hours. Then remove it from the freezer and churn it in the mixer blender jar.
  5. Now pour this mixture into kulfi moulds (add wooden sticks and chopped nuts at this stage) or you can also use any other icecream mould to set the kulfi as per your preference. Let it set in the deep freezer for 6-7 hours or overnight. Serve it. :)

The kulfi would come out easily. You may insert a popsicle stick in the kulfi while freezing it, in India we always get kulfi on the sticks from the local vendor. I didn't use one because I ran out of the sticks! You can garnish the kulfi with some more nuts or saffron strands, but it's totally optional. It is often described as "traditional Indian ice cream".
