Mango Puree - Fresh or canned mango pulp of Alphonso, Kesar or Ataulfo mangoes. Dairy - Heavy whipping cream, milk, or evaporated milk. Sweetener - Condensed milk (recommended) or sugar; Nuts - Almonds and pistachios, coarsely ground.

  1. First heat milk in a heavy bottom pan. Continue to heat the milk in low medium flame for 5 to 6 mins.

  3. Now add condensed milk soaked saffron strands to the milk and mix well cook for 5 mins stirring occasionally.(you can use evaporated milk instead of condensed milk)
  4. As and when a thick malai layer forms on the top of the milk remove it and add it back to the milk. Now add dry fruits and mix well.
  5. Let the milk continue to heat for 10 to 15 mins until it is reduce to half.
  6. Now add corn starch mix to the milk and keep stirring until the milk thickens and add sugar. Stir it
  7. Turn of the flame and cool down. Now add mango purée and mix well.
  8. Transfer the kulfi mixture to a kulfi moulds and freeze. Until set on top insert the stick and freeze until the kulfi is set.
  9. Kulfi is ready to serve sprinkle some dry fruits.

Flavor - Cardamom powder; Salt - a pinch of salt can make a difference and help bring out flavors. Preparation: In a mixing bowl, add mango puree, fresh double cream, condensed milk, evaporated milk and beat with help of electric hand beater until it turns into creamy and lighter. Now add the chopped nuts and mix well. Kulfi is an Indian version of Icecream that is getting popular all over the world. Denser and creamier, it is mostly made in the shape of a cone.
